  • Commercial electric cookers. In these cookers, the energy source is electricity, and heat is produced by heating elements controlled by a thermostat. When there is no gas supply because there is no installation or because the building regulations do not allow it, commercial electric cookers can be ideal, as they only need to be connected to the mains, and they are also less maintenance-intensive, especially in terms of safety.

  • Commercial gas cookers. In commercial gas cookers, the heat source comes from the burners, directly from the flame, and a natural gas installation is necessary in the kitchen of the restaurant, bar, hotel, etc... For this reason, the safety systems they incorporate are greater, so maintenance will be greater than in commercial electric cookers.

  • Commercial cookers with or without oven. The ovens used in today's professional kitchens for hospitality can be gas ovens with a spark ignition, i.e. a spark plug generates an electric spark which reacts with the gas to produce a flame, or if the commercial electric cooker incorporates an electric oven, it will have a heating element at the bottom for its operation and yet another heating element at the top to also function as a grill, an added advantage of the electric oven compared to the gas oven. The latter cannot be fitted with a grill; it would have to be purchased separately.

For perfect baking, the temperature is controlled by a thermostatic valve, which can be adjusted from 50 ºC to 350 ºC.
